Ingredients:
- 2 chicken breasts
- 8 oz pasta penne, spaghetti, or your favorite
- 4 tbsp butter
- 3 garlic cloves minced
- 1 tbsp lemon juice
- 1 tsp red pepper flakes optional
- 1 tbsp fresh parsley chopped
- Salt and pepper to taste
- Olive oil for cooking
Cooking Instructions:
Cook the pasta according to package instructions, then drain and set aside.
Season chicken breasts with salt and pepper, then cook in a skillet with olive oil over medium heat for 6-7 minutes on each side, until golden brown and cooked through.
In the same skillet, melt butter and sauté garlic for 1 minute. Add lemon juice, red pepper flakes, and parsley, stirring to combine.
Add cooked pasta to the skillet and toss in the sauce. Slice the chicken and place it on top.
Serve hot, topped with extra parsley or Parmesan, if desired.
Recipe Notes:
- For a lighter version, use olive oil instead of butter and add more lemon juice for a fresh kick.
- You can swap chicken for shrimp or tofu for a variation.
- Don’t skip letting the chicken rest before slicing—it keeps it juicy!
